Cold Weather Cranberry and Sweet Potato Roast

I’m always looking for a fun snack or appetizer to serve. These roasted sweet potato bites are perfect for a cold Winters day while watching the game! They are healthy, nutritious AND delicious! 

Sweet potatoes are my favorite potato. They are loaded with fiber and antioxidants to promote a healthy gut. I love adding cranberries to any Winter-themed recipe, and they’re a great way to make any snack or appetizer healthy. Cranberries are a powerhouse of antioxidants that helps with weight loss, combats tooth decay and helps with immune function.

Cold Weather Cranberry and Sweet Potato Roast

Servings:

Cook time: 35 minutes
Total time: 50 minutes
Course: Appetizer/Any
Diet: Gluten Free

Ingredients:

  • 2 Sweet Potatoes
  • 2 Tbsp olive oil
  • Pinch of Cinnamon
  • 1 cup Ricotta Cheese (or Vegan substitute)
  • 2 tsp Italian seasoning
  • 1 tbsp Honey
  • 2 capsules of Just Thrive Probiotic
  • ½ cup Dried Cranberries
  • ½ cup walnuts or pistachios 
  • Salt and Pepper to taste
  • Fresh Rosemary to garnish

Directions:

  1. Preheat oven to 400 degrees
  2. Remove skin and slice up the sweet potatoes into round circles ¼ inch thick
  3. Cover the potatoes with olive oil, cinnamon, salt and pepper. Place on a baking sheet.
  4. Bake for 20 mins. Flip them over and bake for another 15 mins until cooked through and crispy.
  5. In a large bowl, combine ricotta, Italian seasoning, Just Thrive Probiotic (open capsules and sprinkle in contents), Salt and Pepper to taste
  6. Add a dollop of the cheese mixture on top of each potato round and broil in the oven for 2 mins until the cheese is warm.
  7. Add cranberries and nuts on top. Drizzle with honey. Garnish with rosemary.
